Almond Biscotti. Lovely with a cup of coffee or tea.

Recipe Ingredients for Almond Biscotti

1 cup blanched almonds
1 tsp. baking powder
1/8 tsp. salt
1 cup all purpose flour
1 cup whole wheat flour
1/4 cup sugar
2 tbsp sugar
1/4 cup splenda
2 tbsp splenda
3 large eggs
1 tsp vanilla
1/2 tsp almond

Recipe Directions for Almond Biscotti

  1. Preheat oven to 350 degrees F.

  2. Brown almonds on cookie sheet for 8 - 10 minutes or until lightly browned and fragrant. Cool and then coarsely chop. Reduce heat to 300 degrees F.

  3. Lightly beat in small bowl eggs and flavourings.

  4. In mixer blend flours, sugars, salt and baking powder for 30 secs. Gradually add egg mixture, dough will form. Part way through add chopped almonds.

  5. Form into two 10" x 2" logs. Put on cookie sheet on parchment paper. Bake for 25 - 30 mins. Remove from oven and cool for 10 mins. Cut 1/2" slices diagonally using serrated edge knife. Place on cookie sheet and bake for 10 mins. Turn and bake for 10 mins longer. Store in air tight container.
