From the alli Diet Plan book, page 245. Important to note that here I used an 85% lean ground beef (not like 95 or 97) and decreased the number of servings to 3 from 4 (making the servings larger), because I needed more calories and fat. Use canned kidney beans. I make my own chili powder for superior flavor (I use Alton Brown's recipe from the Food Network site).

Recipe Ingredients for Alli Chili Mac

1/2 pound lean ground beef
1/2 cup chopped onion
1 garlic clove, minced
16 ounces red kidney beans, cooked
8 ounces tomato sauce
8 ounces stewed tomatoes
2 cups cooked elbow macaroni
1 teaspoon chili powder
1/3 cup shredded low-fat cheddar cheese

Recipe Directions for Alli Chili Mac

  1. Coat a large nonstick skillet with cooking spray and warm over medium heat. Add the beef, onion and garlic and cook, stirring frequently, until the beef browns. Drain in a sieve, pressing lightly to remove the fat.

  2. Return the mixture to the skillet and add the beans, tomato sauce, tomatoes (with juice), macaroni, and chili powder. Cover and simmer for 10 minutes.

  3. Sprinkle with the cheese. Cover and place over low heat just until the cheese melts.
