From the alli Diet Plan book, pg 221. I've increased the portion size (from 4 servings to 3). This does not include the dipping sauce recipe they added.

Recipe Ingredients for alli Chicken Fingers

1/2 cup all purpose flour
1 cup egg substitute
1 1/2 cups panko bread crumbs
2 teaspoons Old Bay
1 teaspoon dried Italian herb seasoning
1/4 teaspoon ground black pepper
1 pound boneless, skinless chicken breasts

Recipe Directions for alli Chicken Fingers

  1. Cut the chicken into short strips, approximately 2 inches long.

  2. Place the flour in a shallow bowl. Place the egg substitute in a separate shallow bowl. In a third shallow bowl, mix the Old Bay, bread crumbs, seasoning, and pepper.

  3. Coat the chicken strips first with the flour, then with the egg, then with the bread crumb mixture. Place on a plate or sheet of waxed paper. Mist both sides of the chicken with nonstick cooking spray. Refrigerate, uncovered, for 30 minutes to allow the coating to set. (If you wish to cook these another day you can lay them in a single later on parchment paper and freeze them. Then store them in the freezer in a freezer bag. Bake directly from the freezer, adding 10 minutes to the baking time.)

  4. Coat a large nonstick skillet with cooking spray and set over medium-high heat until hot. Place the chicken in the skillet in a single layer (work in batches if necessary) and cook for one minute on each side, or until the crumbs are browned. Transfer the strips to a foil-lined baking pan and bake at 375 degrees F for 12 to 15 minutes, or until the internal temperature reaches 160 degrees F and the meat is no longer pink in the middle.
