A hearty pasta dish with yummy chickpeas.

Recipe Ingredients for Allegra's Chickpea Pasta & Fagoli

2.5 cup (1" cubes) Eggplant
20 ea. Raw Tomato Cherry
300 grams Chick Peas
240 grams Penne Dry
1 tbsp Olive Oil
4 tbsp Tomato Paste
1 small Onions
4 clove Garlic

Recipe Directions for Allegra's Chickpea Pasta & Fagoli

  1. Sauté the onion until brown.

  2. Add garlic, continue for 20 seconds.

  3. Add the tomato paste, the beans and the vegetables with a little water.

  4. Cook it down.

  5. About 5 minutes before serving time put the pasta into boiling water.

  6. After 5 minutes drain the pasta and serve the chickpea stew over, with a little more parmasean to taste.
