vibrant, very quick and simple soup

Recipe Ingredients for All the reds soup

1 red pepper, seeded and chopped
1 onion, chopped
1 garlic clove, crushed
2 tbsp olive oil
445 g canned tomato
1 l stock
2 tbsp long grain rice
2 tbsp worcestershire sauce
150 g canned borlotti beans
1 tsp oregano
1 tsp sugar
1/2 tsp salt
1 black pepper

Recipe Directions for All the reds soup

  1. put pepper, onion, garlic and oil into large saucepan. Heat until sizzling then turn down low. Cover and cook gently for 5 min.

  2. Add the rest of ingredients except garnish, bring to the boil.

  3. Stir well, then simmer, covered, for 15 min. Check seasoning, garnish and serve hot. Use vegetarian worcestershire sauce
