Recipe Ingredients for all-in-one veggie breakfast

1 lb potatoes
4 tablespoons olive oil
8 oz button mushrooms
12 cherry tomatoes
4 eggs
2 tablespoons parsley

Recipe Directions for all-in-one veggie breakfast

  1. Spread the potato cubes out in a roasting pan. Drizzle over half the oil. sprinkle with thyme and season. bake at 425 degrees for 10 minutes.

  2. Stir the potato cubes well, then add the mushrooms and bake for 10 minutes. Add the tomatoes and bake for additional 10 minutes.

  3. Make four hollows in between the vegetables and carefully break an egg into each hollow. Bake for 3-4 minutes until eggs are set. Garnish the vegetable mixture with the parsley ans serve straight from the pan, with buttered toast.
