Recipe Ingredients for All Oats All The Time

4 cups quick oats
1 1/2 cups walnuts
4 tsp. cinnamon
2 tsp. baking powder
1/4 tsp. salt
1/2 cup Smart Balance butter
1 1/2 cups light brown sugar
1/2 cup sugar
1 cup Egg Beaters
2 tbsp. cider vinegar
4 tsp. vanilla extract

Recipe Directions for All Oats All The Time

  1. preheat oven to 375. Combine oats, nuts, cinnamon, baking powder, and salt in a food processor. Pulse until nuts are finely chopped.

  2. Beat butter and sugars in a large bowl until smooth. Add eggs, scraping the bowl and again beating until smooth. Stir in vinegar and vanilla, then oat mixture. Drop dough by teaspoonfuls onto parchment lined baking sheets.

  3. Bake cookies, for 14 minutes or until edges are barely browned. Remove from oven and let cool on pans for about 5 minutes. Transfer to a rack to cool completely.
