Recipe Ingredients for All-Bran Knot Rolls

1 cup milk
1/3 cup butter, melted
1 egg
1/3 cup sugar
3/4 tsp salt
1/2 cup all bran
1 1/2 cups bread flour
1 1/2 cups whole wheat flour
2 1/4 tsp dried yeast
1 egg white

Recipe Directions for All-Bran Knot Rolls

  1. Mix together sugar, salt and dried yeast in a bowl.

  2. Make sure milk and melted butter is warm, then add to sugar/salt/yeast mixture.

  3. Stir until the yeast is dissolved, and leave for 5 minutes.

  4. Beat the egg and add it to the bowl.

  5. In another bowl, mix together crushed all-bran and flour.

  6. Add the flour to the milk/egg mixture one cup at a time, until the mixture is too thick to stir.

  7. Scrape the dough out onto a floured board or table top.

  8. Start kneading, adding the rest of the flour gradually until the dough is no longer sticky.

  9. Kneed until smooth and elastic.

  10. Put the dough in a lightly greased bowl. Grease the top of the dough and cover with a clean cloth.

  11. Let it rise in a warm place for about 45 minutes.

  12. Punch the dough back down, cover, and let it rise again.

  13. Punch the dough back down again, then form 14 ropes. Tie a knot and pinch the ends, tuck the ends under each roll.

  14. Let the rolls rise again. Brush the tops with lightly beaten egg white.

  15. Bake for 10 mins at 400F/200C.

  16. Reduce the temperature to 350F/180C and bake for another 10-15 mins, or until golden.

  17. Let stand for about 5-10 mins before serving.
