Recipe Ingredients for All-American Succotash

1/2 cup onion, chopped
1 tsp olive oil
1 cup frozen corn, partially thawed
1 lb frozen lima beans, patially thawed
14 oz Diced Tomatoes
1 tsp salt
1/2 tsp pepper
1/2 cup fresh parsley, chopped

Recipe Directions for All-American Succotash

  1. In a large skillet, sautee the onion in the oil until it wilts, 2-3 minutes.

  2. Add the corn, lima beans, tomatoes, salt and pepper.

  3. Bring to a boil over high heat, then cover and turn the heat to low, and simmer for 10 minutes.

  4. Add the parsley.

  5. Serve hot or at room temperature.
