Delicious and filling, this split pea is my own creation, made from items likely to be in the house. Enjoy!

Recipe Ingredients for Alicia's Easy Split Peasy Recipe

2 NLEA serving Carrots, Baby, chopped into quarters
1 serving Olive Oil
3 serving Honey Sliced Deli Ham, cubed
1 cup, diced Celery
1 serving Organic Vidalia Sweet Onions chopped fine
6 oz Split Peas
4 clove Garlic, pressed through a garlic press. Or diced very very fine, if you haven't a garlic press
1/2 tsp Nutmeg, Ground
1/2 twp Thyme

Recipe Directions for Alicia's Easy Split Peasy Recipe

  1. sauté the garlic in the olive oil.

  2. Add the onions, ham, and celery, continue sautéeing until the onions are clear.

  3. Add peas and carrot.

  4. Cover the mixtures with enough water to leave about an inch atop the solid mixture.

  5. Add spices and a little salt

  6. Bring all to boil, then bring down to a simmer. Cover.

  7. The soup takes about two hours, but every pot is different. Check and stir every fifteen minutes, soup will be done when the peas lose most of their structure and become mushy heaps of goodness. Season to taste.Enjoy!
