A healthy alternative to cream-based sauces. Chicken can also be added (one small breast per person, ~100g) by slightly browning cut-up strips and then adding them to the sauce either just before it is ready to serve or added at the time of serving. For a twist, add sundried tomatoes and sauteed mushrooms.

Recipe Ingredients for Alfredo Sauce (Light)

1 tbsp margarine
1 clove garlic
1 tbsp flour
1 cup 1% milk
2 tbsp light cream cheese
1/2 cup grated light Parmesan cheese
2 tbsp chopped fresh parsley (optional)

Recipe Directions for Alfredo Sauce (Light)

  1. Thoroughly mix all ingredients in small saucepan

  2. Cook over medium-low heat

  3. Sauce should begin to bubble and thicken; continue cooking until desired thickness is achieved. If too runny, add flour until sauce is thicker (do this in small increments)

  4. Serve over whole wheat pasta
