A delicious and filling soup, which can be made with vegetable broth as well. The recipe makes four servings, which is a lot of soup because of all the vegetables in it. One serving = 2.5 cups, a very filling portion. The sodium is high in this recipe because of the canned ingredients, which I use because it's faster than starting entirely from scratch.)

Recipe Ingredients for Alfreda's Italian Bean Soup

7 1/2 cup Spinach
4 oz sliced mushrooms
2 tbsp olive oil
2 tbsp chopped garlic
4 cups fat free chicken broth
1 cup celery, sliced
1 onion, chopped
12 oz Carrots
28 oz can diced tomatoes
19 oz Beans
2 tsp dried basil

Recipe Directions for Alfreda's Italian Bean Soup

  1. In a skillet, sautee spinach and mushrooms in 1 Tbsp olive oil and 1 Tbsp garlic until wilted. Set aside.

  2. Drain and rinse cannellini beans. (The liquid in canned beans contains a lot of starch.)

  3. In a soup pot, saute onion and celery until soft. Add tomatoes, broth and carrots, and cook on medium, covered, until carrots soften. Add spinach mixture and cannellini, and cook for 10 minutes until flavors blend.
