Creamy chicken curry with coriander and broccoli

Recipe Ingredients for Alex's chicken curry

8 tbsp chopped Onions
6 clove Garlic
1 medium (7" to 7-7/8" long) Bananas
4 tsp Curry Powder
3 Serving Chicken
4 serving Blue Dragon Coconut Milk
32 tbsp Cream, Fluid, Light (Coffee Cream Or Table Cream)
6 tbsp Extra Virgin Olive Oil
1 cup White Basmati Rice
1 tbsp Saffron
1 tsp, ground Cardamom
1 oz Coriander

Recipe Directions for Alex's chicken curry

Saute a third of the onions and garlic in olive oil, add mashed banana, curry powder and saute for a few minutes. Add coconut cream and simmer for a few minutes (this is enough for two meals). Set aside (extra curry paste can be frozen until needed). Cook broccoli in unsalted water for 3 minutes. Set aside. Saute half of the remaining onions and garlic in 2 tblsp olive oil, then add chicken and curry paste and simmer gently until chicken is cooked. Meanwhile in another pan saute remaining onions and garlic in remaining olive oil, add basmati rice and saute for a minute or two. Add 2.5 cups of water, cardamom pods and saffron. simmer until rice is cooked. Now add cream to the chicken curry mixture and add brocolli and sprinkling of coriander to taste. Sprinkle more coriander on plated dish for decoration.
