This is one of the easiest fish dishes you can make that is quite healthy and super delicious.

Recipe Ingredients for Alex' Fish Dish

32 oz Cod
1 cup, shredded Gruyere Cheese
3 tsp Thyme, Fresh
1.5 oz Extra Virgin Olive Oil
2.5 cup, sliced Onions
1 tsp Pepper, Black
0.25 oz Coarse Kosher Salt
226.8 grams Bread, Italian
1 tsp Paprika
1 tsp Garlic Powder

Recipe Directions for Alex' Fish Dish

  1. Slice the onions thinly and chop the thyme.

  2. Cut the cod (or other white fish) into 6 pieces. Season both sides of the cod with salt, pepper, and thyme.

  3. Cube the Italian (or whole wheat or French bread) into 1/4 pieces, add 1 Tbsp of the olive oil, and season with paprika and garlic powder. Toss to coat.

  4. Preheat the oven to 400'F.

  5. In a large skillet, heat the remaining 2 Tbsp olive oil over medium heat and saute the onions until tender (about 6-8 minutes). Add the beer (could also use a dry white wine) and continue cooking until reduced to about 1/3.

  6. If you pan is oven proof and large enough to hold all of the fish, place the seasoned cod directly on the bed of onions. If not, transfer the onions to a large baking dish, and place the cod on top. Cover the pan or dish with aluminum foil and bake at 400'F for 12 minutes.

  7. Uncover the pan or dish, and top the cod first with the seasoned bread cubes, and then with the grated Gruyere. Return to the oven, uncovered, and bake for another 8-12 minutes, until the center of the fish is opaque wide, tender, and flakey.

  8. Serve the fish on top of a bed of onions. Accompany with a nice sauteed green like brocolli rabe, collard greens, or spinach.
