Recipe Ingredients for Albondigas Soup


MEATBALLS:
16 oz Ground Beef - 85% lean
8 oz Ground Pork (spicy is nice)
1/2 cup Cornmeal
1/4 cup Whole Milk
1 egg egg Grade A Large Organic Eggs
1/4 cup minced raw Vidalia Onion
1 cloves, raw Garlic, pressed
1 tsp Sea Salt
3/4 tsp Oregano, crushed
1/2 tsp ground Cumin
1/4 tsp Spices Ground Black Pepper, or to taste

SOUP:
8 cup Beef Broth
28 oz Crushed Tomatoes
4 1/2 oz can Green Chilies, with juice
1 cup diced raw Vidalia Onion
2 tsp Oregano, crushed
1/2 tsp Cumin
1/2 tsp Franks RedHot Cayenne Pepper Sauce Original, or to taste
0.33 cup Rice, White, Long-grain, Regular
1 cup Frozen Cut Corn
1/4 cup Coriander Leaves

Recipe Directions for Albondigas Soup

  1. Combine meatball ingredients and mix with a large fork. Set aside. (Meatballs can be made up to 4 hours in advance then refrigerated.)

  2. Place beef broth, tomatoes, green chilies, onion, oregano, cumin & hot pepper sauce in a large saucepan and bring to a boil. Add rice, cover, and simmer for 10 minutes.

  3. Carefully add meatballs to the broth and simmer an additional 10 - 15 minutes until meatballs are cooked through. Add corn and cook until heated through.Taste and add salt and pepper as needed. Stir in chopped coriander leaves just before serving.

  4. *You can top with additional coriander leaves, shredded cheese, crushed tortilla chips, sour cream or guacamole.
