Version of mexican Albondigas. I add extra veggies.

Recipe Ingredients for Albondigas

20 oz Fresh Ground Turkey - Lean
1/2 cup Mahatma Jasmine Enriched Thai Fragrant Long Grain Rice
1 large Egg, Whole
2 tbsp Tomato Paste
1 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
3 cup, chopped Cabbage
4 cup, chopped Squash, Summer, Zucchini, Includes Skin
2 tsp Bouillon
2 tsp Salt

Recipe Directions for Albondigas

in Bowl mix ground turkey, rice and egg with clean hands and roll 20 meatballs. In large pot, boil water and drop in meatballs. Wash and chop cabbage and zucchini into 1/4 slices add to water. Add rest of ingredients: Paste, tomato cut in half. You can omitt bouillion and salt to taste.
