Delicious low calorie vegetable stew

Recipe Ingredients for Albanian Vegetable Stew

548 g aubergine
2 red peppers
1 onion
1/4 cup of brown rice
1 tbsp. olive oil
80 g vegetable stock cube

Recipe Directions for Albanian Vegetable Stew

  1. Cut the aubergine (into cubes), the peppers(roughly chopped) and the onions.

  2. Add some olive oil to a pot and heat it up.

  3. Simmer the onion in the oil until it starts to brown a bit.

  4. Then throw in the peppers and eggplant and the rice and the vegetable stock cube.

  5. Mix together well and let it sautee for a minute. Then throw in enough water so everything in the pot is covered and stir stir stir.

  6. Keep at full boil until the rice is soft -- much of the water will evaporate and the end product will have a VERY delicious mushy consistency.
