The original recipe calls for rice, but I am going to experiment with Quinoa today!

Recipe Ingredients for Alaskan Salmon Curry

29 1/2 ounces Salmon, canned
1 cup Skim Milk
3 tablespoons Curry Powder
1/2 teaspoon ground ginger
1/2 teaspoon salt
1/2 teaspoon sugar
1/2 teaspoon coriander
1/8 teaspoon cinnamon
3 1/3 cups frozen mixed vegetables
4 cups Quinoa
1 3/4 cups tomatoes

Recipe Directions for Alaskan Salmon Curry

  1. In a saucepan, add seasonings, tomatoes, and milk together. Cook until sauce starts to boil. Next, add frozen vegetables and Salmon and heat through.

  2. In another saucepan, add Quinoa into two quarts of water, and allow to soak for 15 minutes. Strain using a coffee filter inside a collander or a mesh strainer to remove its outer shell. Cook the Quinoa for 15 minutes until tender. Fluff with fork.
