Recipe Ingredients for Alan's mom's carrot cake cupcakes

1/2 cup brown sugar
1/2 cup white sugar
1/2 cup canola oil
1 orange, seedless
2 eggs
1 cup flour
1 tsp baking soda
1 tsp cinnamon
1 tsp nutmeg
3/4 tsp ginger
1 1/2 cups carrot, grated

Recipe Directions for Alan's mom's carrot cake cupcakes

  1. Preheat oven to 350. Grease and flour a 9" round cake pan (or 12 muffin cups).

  2. Cut whole orange into chunks. In a blender, blend orange and oil.

  3. Using an electric mixer, beat sugar, orange and oil, and eggs in a large bowl until well blended.

  4. Add flour, baking soda, cinnamon, nutmeg and ginger; beat until blended.

  5. Stir in carrots.

  6. Pour into prepared pans and bake 25-35 minutes until a toothpick inserted in the middle comes out clean.

  7. Cool on rack 15 minutes. Turn cake onto rack and cool completely.
