Recipe Ingredients for Alan's Black Bean Chili

1/2 c onion, chopped
1/2 c red pepper, chopped
1 tbsp olive oil
22 1/2 ounces black beans, rinsed & drained
14 1/2 ounces diced tomatoes, undrained
1 c. vegetable broth
1/3 c salsa
1 tsp ground cumin
1/2 tsp dried basil
1 tsp dried red pepper flakes

Recipe Directions for Alan's Black Bean Chili

  1. In large saucepan, saute onion and red pepper in oil for 4-5 min or until crisp-tender.

  2. Stir in beans, tomatoes, broth, salsa, cumin, basil, red pepper flakes.

  3. Reduce heat and simmer, uncovered, for 10-25 minutes or until heated through.

  4. (Remove dried red pepper from pot, if using.)

  5. Serve over brown basmati rice, if desired.
