Recipe Ingredients for Akiko's carrot cake

1 1/2 Carrot (1.5 medium size carrots, grated) about 1.5 cup
1/2 cup margarine =Salad oil + melted margarine 0.5 cup (or you can use butter, or just oil, or just margarine)
1 cup Brown Sugar (you can use brown sugar, brown sugar + honey. If you use white sugar, probably only need 0.8 cup.)
2 eggs
1 1/2 cup Flour (you can use whole wheat flour, or plain white flour, or mix them)
1 cup Sun-maid mixed fruits (any dried fruits you like. I used dried apple, raisins, cranberries. You can use pineapple, apricot, pa
1 cup Walnuts (0.3 cup to use as topping)
1 1/2 tsp Baking soda
1/2 tsp dried Cinnamon powder
1/2 tsp dried Nutmeg powder (1 tsp together of both)
1 pinch Salt
1 tsp Vanilla extract
1 cup light Cream Cheese (about half of the square pack you can buy from the store. You can buy ?light? version) + Sugar + 1 table
1 tsp lemon juice
1 tbsp sugar
1 tbsp butter

Recipe Directions for Akiko's carrot cake

  1. 1. Mix eggs, sugar, oil, vanilla extract until sugar melts

  2. 2. Add flour, baking soda, cinnamon + nutmeg, pinch of salt and mix them with 1)

  3. 3. Add carrot and mix

  4. 4. Add fruits and mix

  5. 5. Add walnuts (0.7 cup) and mix

  6. 6. Bake in 170 degrees, 30 - 40 mins. Stick a wooden chopstick into the cake, and if it comes out without anything sticky, then it?s done.

  7. 7. Leave it till cools down to the room temperature

  8. 8. Cover with cream cheese icing and walnuts for topping

  9. 9. IMPORTANT: make sure you leave one night in the fridge. This makes the cake nice and moist. The moisture from the cream cheese icing goes down into the cake over a night.

  10. For icing or topping:

  11. 1 cup light Cream Cheese [90774] (about half of the square pack you can buy from the store. You can buy ?light? version) + Sugar + 1 table spoon of margarine (or butter) + a tea spoon of lemon juice: This is the cream cheese icing on the top. Adjust the sugar for your own taste!
