1 tablespoon extra virgin olive oil
1/2 cup chopped onion
1/2 cup chopped celery
1/2 cup chopped red pepper
1/2 cup chopped green pepper
14 1/2 oz. fire roasted diced tomatoes
3 cloves minced garlic
14 1/2 oz. chicken broth, reduced sodium
1 cup fat-free refried beans
13 oz. canned chicken breast, shredded
1 cup canned black beans with jalepeno, well rinsed
2 teaspoons chili powder
1 teaspoon garlic powder
1 teaspoon chopped fresh cilantro
1 teaspoon ground cumin
1 teaspoon lime juice

Recipe Directions for Aimee's Mexican Chicken Soup

  1. 1.Heat oil in a large pot over medium/high heat.

  2. 2.Add celery, onion, garlic, and pepper. Cook until tender.

  3. 3.Stir in tomatoes and broth; bring to a simmer.

  4. 4.Add remaining ingredients.

  5. 5.Cover and simmer for 30 minutes.

  6. 6.Season to taste. Serve with shredded cheese and/or sour cream.
