This is my sister in laws amazing chicken cordon blue. The panko bread crumbs give it a yummy crispy outside. They can be found with all of your Asian ingredients at your local super market!

Recipe Ingredients for AIMEE?S CHICKEN CORDON BLUE

3 eggs
2 tbsp. butter
8 slices Swiss cheese
8 chicken breast
1 Salt and pepper to taste
1 1/2 c. Panko bread crumbs
8 slices boiled ham
2 cups Grated Parmesan cheese
8 slices Pineapple

Recipe Directions for AIMEE?S CHICKEN CORDON BLUE

  1. Pound breasts thin between 2 pieces of plastic wrap until cutlets are 1/4 inch thick. Discard wrap and season chicken with salt and pepper.

  2. Dip each cutlet into beaten egg. Top each cutlet with 1 slice of ham and 1 slice of cheese. Roll each cutlet up and cover with bread crumbs. Top with sliced pineapple (if desired)

  3. Place in shallow greased baking dish. Bake, uncovered, for 45 minutes at 350 degrees. Sprinkle with Parmesan cheese. If it browns too quickly or cheese cooks out, add a little water

  4. Note: The ham and cheese are rolled inside of the cutlet. I use tooth picks to hold them closed while baking.
