Recipe Ingredients for Aimee's carrot muffins

1 1/2 cups Puree
1/2 lb butter, unsalted
1/2 tsp salt
2 golden zucchini, grated
1 cup raisins
2 cups water
1/2 cup applesauce
4 eggs
3/4 cup brown sugar
1/2 cup walnuts, chopped
1 tsp cinnamon
2 cups flour
1 tsp baking powder
2 tsp baking soda

Recipe Directions for Aimee's carrot muffins

  1. 1. Preheat to 350.

  2. 2. Soak raisins for 15 minutes in water. Drain water.

  3. 2. Mix together wet ingredients (eggs, puree, butter, applesauce). Add sugar, baking soda, baking powder, and cinnamon.

  4. 3. Add flour. Fold in zucchini.

  5. 4. Put in greased muffin tins; top with a couple of walnuts.

  6. 5. Bake at 350 for 25 minutes approx.
