easy chicken salad. orig. called for greek yogurt and raisins. I used dannon yogurt (1/4 cup instead of 3 tbsp) and cranberries instead of raisins.

Recipe Ingredients for AICR's Vidalia Chicken Salad

1/3 cup walnuts
8 ounces roasted chicken breast, diced into 1 inch pieces
1 large apple, cored and diced into 3/4 inch pieces
1/2 cup Vidalia onion, diced into 3/4 inch pieces
1/2 cup dried cranberries
2 ounces yogurt
1 tbsp. reduced fat mayonnaise
1 tbsp. lemon juice
8 leaves red-leaf lettuce

Recipe Directions for AICR's Vidalia Chicken Salad

  1. mix everything and enjoy.

  2. I used boiled chicken instead of rotisserie

  3. also, orig. recipe said to toast the nuts. I didn't bother.
