Recipe Ingredients for AHS Mixed Rice & Veggies

1/2 cup brown rice
1/4 cup jasmine rice
1 clove garlic
1/3 cup shallots, chopped
2 1/2 cups mushrooms, sliced
1 cup sweet peppers, yellow, red
1 1/2 cups carrots, sliced
2 cups zucchini, diced
1 tomato, chopped
6 oz spinach
1/2 cup (college inn) chicken broth
1/4 tsp salt
2 tbsp basil, chopped
1/4 cup parmesian cheese

Recipe Directions for AHS Mixed Rice & Veggies

  1. Cook rice (or use Trader Joe's frozen rice)

  2. Cook veggies

  3. Toss all with remaining ingredients
