Simple and quick pasta dish for a weeknight

Recipe Ingredients for Aglio e Olio

1/2 cup extra virgin olive oil
1 lb pasta
6 cloves garlic
1 tablespoon red pepper flakes
1/2 cup grated parmesan cheese
14 oz artichoke hearts
1/2 lb brocoli
4 oz sundried tomatoes

Recipe Directions for Aglio e Olio

  1. Boil the pasta until almost done. When just short of al dente, put aside 1 cup of water, then drain the pasta.

  2. Saute garlic and red pepper flakes 1-2 minutes until fragrant, then toss in the veggies.

  3. Once brocoli is almost finished, add the pasta and pasta water. Toss in most of the grated parm, saving a little for garnish. Cook 2-3 minutes and serve.
