Recipe Ingredients for After-Turkey-Day Turkey Soup

8 cups turkey broth
3 1/2 cups Turkey, All Classes, Meat Only, Cooked, Roasted
2 cups onions, chopped
1 cup carrots, diced
1 cup celery, diced
5 tbs butter, with salt
3 tbs smart balance 67% buttery spread
2/3 cup wheat flour, white, all-purpose, enriched, bleached
1 1/2 cups Corn, Sweet, Yellow, Frozen, Kernels Cut Off Cob, Boiled, Drained, Without Salt
1 1/2 cups Peas, Green, Frozen, Cooked, Boiled, Drained, Without Salt
2 whole bay leaves
1 cup cream, fluid, half and half
1 tsp sea salt
1 (4g) Chicken Bouillon Cubes
1 tsp poultry seasoning
1/2 tsp pepper, black
7 1/2 cups Noodles, Egg, Dry, Enriched (12oz package, cooked per package directions)

Recipe Directions for After-Turkey-Day Turkey Soup

  1. In a soup kettle or Dutch oven, saute the onions, carrots, and celery in butter until tender.

  2. Reduce heat; stir in flour until blended.

  3. Gradually add 2-3 cups turkey broth.

  4. Bring to a boil; cook and stir for 2 minutes or until thickened.

  5. Add green peas, sweet corn, and bay leaves; bring to boil again.

  6. Add cream, salt, bouillon cube (dissolved in broth), poultry seasoning, pepper, remaining broth, and turkey meat.

  7. Reduce heat; cover and simmer for 20 minutes.

  8. Add cooked egg noodles; simmer for 10 minutes.
