Recipe Ingredients for African Yam and Peanut Soup

3 vegetable bouillon cubes
2 tbsp vegetable oil
1 yellow onion
2 tsp salt
6 tbsp ginger
4 garlic cloves
2 tbsp coriander
1/2 tsp cayenne pepper
1 tsp paprika
1 red pepper
5 cups yams
4 tbsp peanut butter
4 tbsp lime juice
2 cups cilantro

Recipe Directions for African Yam and Peanut Soup

Saute onions, spices, ginger and garlic in olive oil. Add chopped yams, cook 1 minute, then add bouillon cubes and 6 cups water. Simmer until yams are soft. Add red pepper and peanut butter, cook 5 minutes, then puree. Serve with lime juice and cilantro.
