Recipe Ingredients for African Sweet Potato and Peanut Stew

4 cups Sweet Potatoes
16 oz red kidney beans
1 Vidalia Onion
2 Red Peppers
2 Whole Tomatoes
400 g (g g) vegetable stock
1 cup peanut butter
3 tsp brown sugar
1 tsp cumin
1 tsp cinnamon
1/2 tsp cayenne pepper

Recipe Directions for African Sweet Potato and Peanut Stew

  1. Sautee onions and garlic in 3 tbls water 5 minutes. Add bell peppers cook 5 more minutes. Add brown sugar, giner, cumin, cinnamon and cayenne pepper, cook 30 seconds. Add peanut butter, distribute evenly, incorporate into stew. Add 1/4 cubed sweet potatoes, rinse and drain kidney beans. Add. Add 1/4 inch cubed tomatoes. Stire to coat. Add vegetable broth, stire. Cook about 30 minutes until sweet potatoes are soft.

  2. Garnish wish cilantro and/or chopped peanuts
