Recipe Ingredients for African Stew

1 1tsp Olive Oil
1.5 cup chopped Red Onion
1.25 medium raw Bell Pepper Green
0.5 cup, chopped Carrots
0.5 cup, diced Celery
3 clove Garlic
6 tsp Ginger Root
3 tsp Curry Powder
14.5 oz Diced Tomatoes, No Salt Added
1 tsp, crumbled Bay Leaf
1.5 cup Shelled
4 serving Safeway Organics Chicken Broth Low Sodium
8 tbsp Regular Creamy
7 tbsp Fresh Frozen Chopped Cilantro
5 oz Spinach
1 tsp Pepper, Black
12 oz Sweetpotato

Recipe Directions for African Stew

  1. saute onion, bell pepper, carrot and celery in olive oil until soft.

  2. Add garlic, ginger and curry powder and saute until fragrant. Add tomatoes and bay leaf, cook uncovered until tomatoes are slightly reduced.

  3. Add broth and sweet potatoes and bring to boil. Reduce heat to low simmer about 8 min. Stir in edamame and peanut butter until combined. Cook until thoroughly heated,, stir in cliantro an dspinach until spinach wilts. Season with salt and pepper if desired.
