Quick dinner to use up leftover noodles and veggies. Add heat with jalapeno or cayenne.

Recipe Ingredients for African Spaghetti Omelet

1/4 lb spaghetti, cooked, drained
1 c onion, small chopped
1/2 c mushrooms, small chopped
1 T garlic, minced
1 T canola oil
1 T red pepper flakes
6 eggs

Recipe Directions for African Spaghetti Omelet

  1. Cook spaghetti al dente, drain, set aside.

  2. Heat oil in large fry pan.

  3. Add onions and cook until soft.

  4. Add mushrooms and red pepper flakes until mushrooms are just cooked through.

  5. Beat eggs together.

  6. Heat frypan to med heat and pour eggs on top of cooked veggies.

  7. Cover and cook (without stirring) until egg is cooked through.

  8. Cut into 8 wedges.

  9. Serve as is or add hot sauce, salsa, etc.
