Recipe Ingredients for African Pineapple Peanut Stew

1 c onion, chopped
2 garlic cloves, minced
1 tbsp canola oil
4 c or 1 bunch kale, chopped
20 oz crushed pineapple
1/2 c peanut butter
1 tbsp Tabasco sauce
1/2 c fresh cilantro, chopped

Recipe Directions for African Pineapple Peanut Stew

  1. In a covered saucepan, saute the onions and garlic in the oil for about 10 minutes, stirring frequently, until the onions are lightly browned.

  2. While the onions saute, wash the kale. Remove and discard the large stem and any blemished leaves. Stack the leaves on a cutting surface and slice crosswise into 1-in slices.

  3. Add the pineapple and its juice to the onions and bring to a simmer. Stir in the kale, cover, and simmer for about 5 minutes, stirring a couple of times, until just tender.

  4. Mix in the peanut butter, Tabasco, and cilantro and simmer for 5 minutes.

  5. Add salt to taste and top with crushed peanuts and chopped scallions (optional).

  6. Serve over rice our couscous.
