Recipe Ingredients for African Peanut soup

2 tbsp olive oil
3 medium onions, chopped
2 large green peppers, chopped
4 cloves garlic
6 fresh tomatoes
8 cups vegetable broth
1/4 tsp chili powder
2/3 cup peanut butter
1/2 cup uncooked brown rice

Recipe Directions for African Peanut soup

  1. Heat oil in a large stock pot over a medium high heat.

  2. Cook onions and peppers until lightly browned and tender, stir in garlic when almost done to prevent burning.

  3. Stir in tomatoes, vegetable stock, pepper and chili powder.

  4. Bring to the boil then gently simmer, uncovered for 20 minutes.

  5. Stir in rice then cover and gently boil for another 5 minutes.

  6. Cover with a lid and then put cooking pot into the Cooking Basket for another 30 minutes or until the rice is tender.

  7. Stir in peanut butter until well blended, and serve
