Delicious, serve with fresh bread. Takes about 3 and a half hours start to finish. Makes 8 servings each about a cup and a half.

Recipe Ingredients for African Beef & Peanut Butter Stew

2 lbs stewing beef, fat removed, cut in cubes
4 large onions, sliced
4 cups carrots, sliced
4 cloves garlic, minced
4 tbsp tomato paste
1/4 tsp bay leaf (2 leaves)
1/8 tsp cloves, ground
1/8 tsp ginger, ground
1/8 tsp cayenne pepper
2 tbsp lemon juice or vinegar
4 cups beef stock
2 cups peas, frozen
4 tbsp peanut butter
1/2 cup flour
6 tbsp water

Recipe Directions for African Beef & Peanut Butter Stew

  1. Brown meat.

  2. Add vegetables and cook about 5 minutes.

  3. Stir in tomato paste, bay leaves, seasonings, lemon juice and stock.

  4. Bring to a boil and cover.

  5. Simmer for about 2 1/2 hours.

  6. Add frozen peas.

  7. Blend flour with the water and peanut butter.

  8. Add blended mixture to the meat and vegetables.

  9. Cook another 5 to 10 minutes until well thickened.
