Vegetable soup with adzuki beans and quinoa

Recipe Ingredients for Adzuki-Vegetable Soup

12 oz potatoes
5 oz carrots
5 stalks celery
10 oz broccoli
15 1/2 oz bok choy
6 oz onion
2 cloves garlic
1 tbsp olive oil
7 1/5 oz mushrooms
22 1/2 oz tomatoes
1 cup cooked adzuki beans
2/3 cup cooked quinoa
2/3 cup frozen green beans

Recipe Directions for Adzuki-Vegetable Soup

  1. Cook potatoes in water.

  2. Saute onions and garlic in oil and salt for a few minutes.

  3. Add all vegetables.

  4. Add 1/2 teaspoon of thyme, basil, marjoram, rosemary and freshly ground black pepper. Cook 5-10 minutes.

  5. Add cooked beans and quinoa.
