Recipe Ingredients for Adzuki Bean Stir-Fry

1 tsp cooking spray
1 small onion
1 medium red bell pepper, sliced
2 cups snow peas, halved
2 tsps garlic, minced
1 tsp gingerroot, minced
1 1/2 cups adzuki beans, uncooked dried
1 cups water
2/3 cups orange juice
2 tbsps soy sauce
2 tbsps vinegar, rice wine
2 tbsps honey
1/2 tsp chili powder
4 tsps cornstarch
1 1/2 cups brown rice, uncooked

Recipe Directions for Adzuki Bean Stir-Fry

  1. Cook rice and beans.

  2. Spray wok or large skillet with cooking spray; heat over medium heat until hot. Stir-fry onion, bell pepper, snow peas, garlic, and gingerroot 5 minutes.

  3. Add beans and water and heat to boiling; reduce heat and simmer, covered, until vegetables are crisp-tender, 3 to 5 minutes.

  4. Heat mixture to boiling. Mix remaining ingredients, except rice; stir into wok. Boil, stirring constantly, until thickened, about 1 minute. Serve over rice or noodles.
