A black bean soup recipe substituted with adzuki beans and beef broth.

Recipe Ingredients for Adzuki Bean Soup

1 cup dry adzuki beans
2 medium onions, diced
2 stalks celery, diced
4 cloves garlic, minced
14 oz beef broth
14 oz water
1/4 tsp salt
8 oz kielbasa or other sausage, chopped

Recipe Directions for Adzuki Bean Soup

  1. Soak beans overnight. Rinse, pick through, drain.

  2. Put beans in large pot or dutch oven with broth and water.

  3. Cut onions, celery, and garlic. Add, along with salt, to pot.

  4. Bring pot to boil.

  5. Reduce to simmer and cover to cook for about 35 minutes.

  6. Mash or puree a portion of the soup if desired for texture.

  7. Add sausage to pot and allow to heat through.

  8. Serve.
