Recipe Ingredients for Adzuki Bean Mango Stir Fry with Cilantro Lime Coconut Sauce

1 cup light coconut milk
1/2 cup fresh cilantro, chopped
1 T Fresh lime juice (1 lime)
1 T fresh ginger root, minced
1 clove garlic, minced
1 T peanut oil
1 red onion, cut into 1-inch strips
1 green bell pepper, cut into 1-inch strips
1/2 cup carrot, thinly coin sliced
90 g adzuki beans, raw, boiled to equal 1 cup
2 mango, peeled and cut into strips

Recipe Directions for Adzuki Bean Mango Stir Fry with Cilantro Lime Coconut Sauce

  1. Cook Adzuki beans to have 1 cup prepared beans. To make the sauce, combine in a blender the coconut milk, cilantro, lime juice, ginger, and garlic. Blend until smooth and set aside.

  2. Heat oil over med high heat. Cook onion, bell pepper and carrot until tender, about 10 minutes. Add adzuki beans and mango. Heat through. Pour sauce over the top to serve.

  3. NOTE: 1 T agave nectar was deleted due to unhealthy properties. If added sweetness is desired, substitute splenda
