Recipe Ingredients for Aduzuki Bean Barley Salad

1 cup of canned adzuki beans
1 cup cooked pearl barley
1 1/2 tablespoons sesame oil
1 1/2 tablespoons rice wine vinegar
1 1/2 tablespoons tamari soy sauce
1 teaspoon fresh ginger (minced or grated, about a 1-inch piece)
1 garlic cloves (minced or grated)
1/2 teaspoon sugar
1/4 teaspoon coriander
1 tablespoon walnut oil or flax oil
2 green onions, sliced (green & white parts)
2 carrots, grated
1 tablespoon sesame seeds
1/4 cup fresh cilantro, chopped
2 stalks Celery

Recipe Directions for Aduzuki Bean Barley Salad

  1. Cook barley according to package direction for 1 cup cooked barley. Cool and add to salad mxiing bowl.

  2. Make the dressing while the barely cooks. Whisk the sesame oil, vinegar, Tamari soy sauce, lime juice, ginger, garlic, sugar, coriander and walnut / flax oil. Set that aside.

  3. In your salad serving bowl add the carrot, green onions, celery, sesame seeds and cilantro.

  4. Mix the beans, barley and dressing with the vegetables in your salad bowl. Mix well and garnish with some extra sesame seeds.

  5. Refrigerate.
