Recipe Ingredients for Aduki Bean and Walnut Pie

8 oz aduki beans, soaked and drained
1 pt water

filling:
2 oz walnuts
2 oz sultanas
2 carrots
2 leeks
1 onion
1 T safflower oil
1 tsp cinnamon

pastry:
8 oz wholewheat flour
3 oz butter
8 tsp water
2 T sunflower oil

Recipe Directions for Aduki Bean and Walnut Pie

  1. Cook the beans until bearely tender. Crain and reserve the bean stock.

  2. Preheat the oven to 400 degrees. Grate the onion and parsnips and thinly sclice the leeks. Saute the vegetables in a little oil until they have begun to soften. Mix with the cooked beans, sultanas, walnuts and cinnamon. The muxture needs to be sticky so ass a little bean stock if it is too dry.

  3. Make the pastry and line a greased pie dish with half the amount. Spoon in the filling and top with the remaining pasty. Bake for 30-35 minutes.
