Aduki Bean and Red Cabbage Casserole

Recipe Ingredients for Aduki Bean and Red Cabbage Casserole

1 c red beans
6 oz mushrooms
1 clove garlic
4 tsp olive oil
1 lb red cabbage
3 medium red onions
2 T tahini
2 T tomato paste
4 c vegetable broth
2 T raisins
2 tsp dried dill
2 T fresh mint or parsley
1 tsp caraway seeds

Recipe Directions for Aduki Bean and Red Cabbage Casserole

  1. Soak beans overnight, rinse well. Cover with boiling water and cook until soft - 40 minutes.

  2. cut mushrooms in quarters, soften with 1 clove garlic

  3. sweat red onion and cabbage.

  4. add tahini, tomato paste, spices and stock

  5. bake 1 hour in a 400 degree oven
