Delicious, low cal high protein snack. Great mid morning between breakfast and lunch.

Recipe Ingredients for Aduki Apple Muffins

1 1/2 cups cooked aduki beans
1 apple, peeled, cored and chopped
2 cups whole wheat flour
2 cups apple juice
2 tsp baking powder
1/4 cup brown sugar

Recipe Directions for Aduki Apple Muffins

  1. Preheat oven to 350 degrees.

  2. Mash aduki beans, add coarsely chopped apple, and brown sugar. Set aside.

  3. Mix flour and baking powder, then mix with apple juice and set aside.

  4. Separate half of batter into each muffin paper, then put in the Aduki-Apple mix, then cover with remaining batter.

  5. Cook at 350 for 30 minutes.

  6. Cut into 12 pieces for a just-over 100 calorie snack.
