Bake ahead breakfast casserole. One hour in a 350F or until eggs set. I used 12x12 corningware dish.

Recipe Ingredients for Adkins induction breakfast casserole

10 large Egg, White
1 cup pieces Mushrooms
2 cup Cheese
16 oz Whipping Cream
1/2 cup, chopped or diced Onions
3 pat (1" sq, 1/3" high) Butter
16 oz Sausage

Recipe Directions for Adkins induction breakfast casserole

Chop onion fine and sautee with mushrooms in butter until clear. Drain and set aside. Combine eggs and cream, season with cayenne and black pepper (a touch of salt if you like, but be careful. Mine was a tad too salty), then whip on high until froth forms on the top (2 - 3 minutes). Set aside. Saute sausage until crumbly and no longer pink. Drain and set aside. Ladle about 1" of egg mixture into dish coated with Pam. Sprinkle remaining ingredients reserving about 3/4 cup of cheese for topping. Add remaining egg mixture and bake at 350 or until set. Top with leftover cheese and bake about 5 minutes longer or until melted. Allow to rest for 10 minutes then enjoy! Squares can be wrapped individually and frozen until re-heated in microwave.
