Bell Peppers stuffed with leftovers- grilled chicken breast and cooked barley.

Recipe Ingredients for Adee's Last Minute Stuffed Bell Peppers

2 green bell peppers
2/3 cup cooked barley
2/3 cup chicken breast, roasted chopped
1/3 cup onion, fine chopped
2 cloves garlic, minced
1/4 cup baby spinach, chopped
1 tablespoon fresh basil, chopped
1/2 carrot medium, shredded
1/3 cup tomato, chopped
1/16 teaspoon oregano
1/16 teaspoon marjoram
1/8 teaspoon salt
1/8 teaspoon red pepper flakes
1/16 teaspoon ground cinnamon
1/2 cup chicken broth

Recipe Directions for Adee's Last Minute Stuffed Bell Peppers

  1. Preheat oven 350.

  2. Wash and clean out bell peppers.

  3. Mix well rest of ingredients together in large bowl.

  4. Stuff bell peppers.

  5. Place in Pyrex baking dish with cover.

  6. Bake covered 30-40 minutes.

  7. Serve Hot-Top with 1 tbls of Feta and/or 1 tsp Parmesan or sprinkle with your favorite low-fat cheese.
