Recipe Ingredients for Addictive Sweet Potato Burritos

2 cloves garlic
53 oz black beans, drained
1/2 cup water
3 tbsp chili powder
2 tsp ground cumin
4 tsp prepared mustard
1/8 tsp cayenne pepper
4 oz chopped green chilies
2 oz chopped jalapeno
6 cups sweet potatoes, boiled and mashed
12 flour tortillas
8 oz. shredded cheddar cheese
6 tbsp sour cream

Recipe Directions for Addictive Sweet Potato Burritos

  1. Boil sweet potatoes until soft.

  2. While sweet potatoes are boiling, combine garlic, black beans, water, chili powder, cumin, mustard, cayenne pepper, green chilies and jalapenos in a pot and cook at low temp until warm.

  3. Drain water from sweet potatoes, peel off skins, and mash. Cover and set aside.

  4. Wrap tortillas in tin foil and warm tortillas for a minute or two in oven set at 350˚.

  5. Assemble burritos with bean mixture, mashed sweet potato, cheese, and sour cream.
