halibut and veggies in creamy broth

Recipe Ingredients for adapted fisherman chowder

14 oz. halibut fillet
8 oz mushrooms
1/2 medium onion
1 medium red bell pepper
1 cup celery
1 cup carrot
3 tbs. butter
4 cups low sodium chicken broth
1/2 tsp. salt
1/2 tsp. pepper
2 cup nonfat milk
3 tbs. flour
2 1/2 cup cheddar
1 tbs. parsley

Recipe Directions for adapted fisherman chowder

  1. sautee onion and veggies in nonstick pan

  2. make roux of butter and flour

  3. add broth to this until blended

  4. add veggies and chunked fish to pot

  5. cook until halibut is done

  6. add milk and cheddar and combine
