Recipe Ingredients for Acorn Sqush Soup

14 ounces acorn squash
1 white onion
5 ounces carrot
4 cups water
2 vegetable bouillon cubes
1 green onion

Recipe Directions for Acorn Sqush Soup

  1. cut acorn squash and roast until tender

  2. remove skin and mash

  3. chop onion and carrot and lightly cook in pan

  4. add water and bouillon to pan and bring to boil

  5. when carrots and onion are tender combine with squash in blender or mixer

  6. blend or mix to desired texture

  7. garnish with chopped green onion
