1 acorn squash stuffed with 2 large Bob Evans sausage patties.

Recipe Ingredients for Acorn Squash Stuffed

1 Acorn Squash
1 large egg
2 oz Low Fat Cheese
1/2 c Yellow Onion
1 c Mushrooms
1 c Cabbage
152 g sausage

Recipe Directions for Acorn Squash Stuffed

  1. Cut acorn squash in half. Place in baking dish cut side down. Pour 1/2 cup of water in dish and cover with plastic wrap. Microwave for 8 minutes.

  2. Mix together egg, cheese, chopped onion, chopped mushrooms, shredded cabbage and sausage in large bowl.

  3. Divide and stuff mixture into each acron squash half. Put in baking dish and bake 350 for 1/2 hour or until sausage is done.
