Acorn Squash halves stuffed with ground beef, apple, and rice filling

Recipe Ingredients for Acorn Squash, Stuffed

2 acorn squash, halved
3/4 lb lean ground beef
3 oz celery, chopped
1 onion, chopped
1 apple, granny smith, chopped
1/2 c brown rice, raw
1/4 c sunflower seeds
1 tsp curry powder
2 tsp brown sugar
1 tsp salt

Recipe Directions for Acorn Squash, Stuffed

Cut squash in halves, cover with cellophane and microwave about 8 minutes. Brown beef, celery, onion. Cook rice separately. When cooked, add rice and apple to meat mixture. Flavor with curry powder, salt, brown sugar. Spoon into acorn squash halves, place in baking dish, bake 375 degrees for 15-20 minutes.
